Organic Sasanishiki Rice

This is an organic Japanese rice “Sasanishiki” cultivated by us. The characteristic of Sasanishiki has a light texture with less stickiness, in contrast to the sticky rice Koshihikari. It does not assert itself and enhances the taste of side dishes. Therefore, the light texture is popular as the best sushi rice, and 90% of sushi restaurants in Miyagi prefecture use this less sticky rice Sasanishiki.

Furthermore, in recent years, Sasanishiki does not contain a lot of amylopectins, so it seems that it is needed by customers with allergies. Amylopectin is abundant in other chewy rice. Sasanishiki is also popular as a supporting role in Japanese food culture.

We blend the most similar ingredients to the outer and inner parts of the wheat, along with Gunma’ s pure water, gently and slowly kneading, and allowing the noodles to rest, to create the “old world” Negishi Udon noodles.

Forest-grown Japanese Dried Shiitake KOSHIN 70g

Koshin is larger but thinner than Donko (see above). Harvested later than Donko, after the cap of the Shiitake blooms into a larger umbrella at 42-75mm. Requiring less time to rehydrate and simpler to use in various cuts, many consider Koshin easier and quicker to use.
